I've used this before and it's awesome! I did alter it to make it ever so slightly better.
I used 1/2 ww flour, 1/2 ap. I also used stevia baking sugar, which is half stevia, half real sugar, so it brought the entire sugar content down. I didn't have any yeast but I doubled the flax. I thought about adding fenugreek, but wasn't sure how it would alter the flavor.
The ww flour made it more muffin like, which was great, and the extra flax gave it a nutty flavor.
I've never frozen the dough, but I'm sure you could freeze the cookies. A warm cookie would taste good.
