Rotisserie chicken leftovers

What can I do with it? We had it for dinner and DH for some reason thought we needed three of them. Now we have 1 1/2 chickens leftover. Chicken salad or any variation is out, just 2/6 of us would eat it. I'm 32 wks along and tired and my brain just isn't able to come up with anything the least bit creative. Bonus points if it's something that DH (who cant even make grilled cheese sandwiches) can do with minimal instruction. Thanks in advance!

Chicken Quesadillas- diced chicken and cheese with jalapenos if you want them between two crispy tortillas

Forgot to mention, dd is lactose intolerant so anything that involves cheese or milk as a main part of the dish is out.

Chicken And rice easy as can be

3 cups rice, 7 cups broth or I do water with olive oil because it is cheaper, salt and pepper, dried parsley, thyme, and peas. Put all in a large pot on low let cook unattended 45-50 minutes assuming you are using regular brown rice. If it isn't quite done let cook another 10 minutes. Even my husband can do this.

Chicken tacos

Chicken soup just add the chicken 5 minutes before the soup is done.

I make white chili with my left over rotisserie ckn...

It can go in the crockpot or warmed on the stove.
There are a tons of recipes out there but I just add 4cans of white beans, 1can of rotell (2 if you like it spicy) a little bit of paprika, the ckn and a spoonful of sour cream.

I also sprinkle cheese on it once I put it in the bowl! We eat it with cornbread and it's delicious!!!

Cut or tear the chicken into smallish pieces and put them in a pot. Dump in a bunch of your favorite BBQ sauce (enough to coat the chicken to your liking) and heat it up on the stove. It's great for BBQ chicken sandwiches.

My dd is also lactose intolerant. We usually make chicken and dumplings (our recipe does not use butter and we use soy milk for milk). We usually make a thicker version then what is above- saute chopped onions, carrots and celery in olive oil. Add a spoon or 2 of lour, let it cook a minute then add the broth. Add soup veggies. Then add cooked meat. Then add dumplings. We also do chicken pot pie (using what is left over from the chicken and dumplings- I use flour to thicken it a little more). Then dump it in a pie crust and cover with another.

We also do enchiladas- dd's are cheese less. We do ours with red or green sauce (whatever we're in the mood for) not cream like most chicken enchiladas.

We also do shredded barb chicken sandwiches.

And you could just make some chicken soup

I seen this in a magazine and it was good, a can of croissants and you shred the left over chicken, mix it w BBQ sauce we added shredded cheese but u could omit that. Unroll dough, put a spoonful of the mixture on it roll up and bake per croissant instructions, it was quick and easy!
