Chili and cornbread

I wanted to use up some leftovers tonight. The boys had rigatoni and meatballs. I had a mixture of quinoa, chicken breast, sauteed mushrooms, peppers and onions with tomato sauce, and a side of mashed turnips.

Baked potatoes with un-bacon bits, earth balance salt & pepper and a little sirachi sauce.

Lunch was really good black bean, corn & rotel enchilada casserole (made using corn tortillas) all layered together with this amazing enchilada sauce. 10 min enchilada sauce

Tofu (meat)loaf and baked taters.

The "tofu -meat loaf" is tofu marinated in bbq mixed with last night's leftovers blended together (corn, green beans, french fries, tortilla soup) and baked for an hour on 400*.

Lol. I waste not.

We're on vacation and just had kosher-style corned beef and pastrami sandwiches, with sour pickles and cole-slaw, potato salad and cheesecake and rugalach. So delicious!
