I would think those stairs aren't safe for toddlers. Especially if both want to go first, which will happen
I would put the bathroom under the stairs. And if they are wide enough you can put the washer/dryer side by side under the stairs part. If that makes sense. Do you want a bedroom for you and your hubby? Or will you sleep in the living room, or upstairs with your kids?

yeah, I didn't think about them fighting over the stairs...they fight about everything else so why not haha?
I can only see the first link, the rest won't come up for me. Oh, and the top would be two lofts with a catwalk between them. So we would have a loft and they would have a loft. We figure eventually we could add on a master bedroom on the bottom and a dining room...that would increase our living space and give each kid their own loft.

Spiral staircase? Smaller footprint and you wouldn't have the awkwardness of trying to use the triangular space underneath.
Our drop down attic-like stairs? Whatever they're called. Not sure how convenient that is though.

That sounds so fun! Have you considered alternating tread stairs? They are very space saving. Also maybe a European style combo washer/dryer in one to save space?

And I think the dryer would be electric then and that would suck a bunch of power (solar powered house) But I HAVE thought about a convection oven. One that is a microwave and an oven?? We use both often enough to justify both....but if we could have 1 that does both jobs that would be awesome. But I don't know anything about them. Anyone have one?

Convection ovens work great. I use one in my classroom. There was a bit of a problem with them several years ago, so don't buy a used one. The new ones are upgraded and fairly inexpensive.

I think you should consider a wall of storage that includes EVERYTHING, like this:
