Throw me some boneless chicken recipes

I have a crazy amount of chicken! Downside is that its frozen in bags of 24 pieces. I need some recipes! I think the next bag I will thaw and boil half and BBQ half on the crockpot. Any other ideas? Tonite is chicken noodle soup and tomorrow is chicken nachos. No more this week probably

I really like it in a casserole with cooked rice, sauteed mushrooms, broccoli, and either homemade or canned cream of mushroom soup. Just stir it all together with cooked shredded chicken and bake in the oven with or without cheese on top.

I do batches of crockpot chicken where I just throw it in with water to cover, cook all day, shred, and then portion out for future meals. I use the stock from the crockpot to make the rice as well.

Chicken quesadillas.
Home made chicken nuggets.

I like to cut mine into bite size pieces, coat in egg and then dredge in Italian style bread crumbs mixed with parmesean cheese (about 1 cup bread crumbs to 1/4 cup parm). Lightly fry the pieces in coconut oil.

Server over spaghetti with red sauce, or use it for Chicken Fettuccine Alfredo.

Chicken and white bean chili.

Chicken Fajitas.

Chicken Parmesan... coat in the bread crumb/cheese mixture above. Lightly pan fry in coconut oil until both sides are brown. Pour your red sauce into a baking dish and set chicken on top. Bake at 350 for about 30 minutes (until chicken is cooked through), lay pieces of mozzarella or provolone on top. Place back in the oven and turn the dial to broil, keep a close eye on it and broil until cheese is melty, bubbly and slightly brown. Serve with your favorite pasta.

Chicken casserole with rice, broccoli and cheddar cheese.

Slow cooker chicken chili

1 can corn
1 can black beans
1 can rotel (tomatoes)
1 packet dry ranch mix
1T chili powder
1T cumin
1T onion powder
2 frozen chicken breasts
1 pkg cream cheese (can substitute w plain Greek yogurt)

In crockpot add whole can of corn and rotel, drain black beans. Add ranch, chili powder, cumin, and onion powder. Mix. Add chicken breasts, make sure it is submerged.
Cook on low for 7 hours (half the time if cooked on high)
When done, shred chicken w fork.
Add cream cheese & stir until well mixed

This can be put over rice, although dh and I eat as is.
This is amazing, we make it often!

I've cooked chicken recipes like Cordon Bleu, chicken tacos, eggplant and chicken spaghetti and chicken tandoori salad. I just googled their recipes but I do use optional ingredients instead of those that are hard to find in the store.
