My Mood:
Cabbage - stuffed cabbage, coleslaw, cabbage and kielbasa soup, homemade sauerkraut, corned beef and cabbage

Carrots - carrot cake, carrot ginger soup, honey mustard glazed carrots, roasted carrots, curried carrot soup

I could probably come up with a million more, but that's a start

Re: recipe ideas for carrots or cabbage

I add carrots to LOTS of things! I just puree it or use my food processor to make it fine.

I add carrots to
*almost all soups
*meatloaf
*mac n cheese
*casseroles (like tuna casserole, pizza bake, etc.)
*pizza sauce/spaghetti sauce
*brownies/breads

As long as you don't use a ton carrots aren't really noticed in most recipes.

As for onions...if we plan on using them for cooking I dice them fairly small and throw them in the freezer...they work great for cooking, but not if you are wanting them fresh (like for tacos or to top burgers). But be cautious because sometimes freezing them enhances the flavor!

You could make potato soup too! I make mine with carrots, celery, onion, butter and milk. You can easily add broccoli or cauliflower...and of course cheese.

I like chicken broth better than beef though.

I have frozen carrots before...and then add them to soups/stews. Worked fine for me...BUT they weren't frozen for long...less than a month probably.
