Last night:

Stuffed bell peppers (turkey, quinoa and seasonings) with a mixed green salad topped with home-made italian dressing, cherry tomato halves and feta cheese.

Tonight: Lime grilled mahi mahi, grilled asparagus and cauliflower poppers. I don't have a grill so I broiled the mahi mahi and asparagus.

A few nights ago we did bacon wrapped chicken bites and garlic broccoli.

I think tomorrow night will be bacon & broccoli fritata with home made hashb browns and a salad.

We had chili and corn bread a few nights ago when it was really cold.

Last night, I got home late, so I just grabbed a pizza. Tonight we had roasted veggies with quinoa and kind of a light vegetable gravy. Tomorrow, I'll probably make chicken soup.

We're having pork tenderloin.. maybe.. I didn't take it out of the freezer until 10 last night and its still frozen solid.

Add all above ingredients to your crockpot and cook on low for 6-8 hours. I stir it up so the chicken sort of shreds all the way through the mixture. Serve with rice, I usually just mix our rice into the 'saucy mixture'.

Not sure about tonight but tomorrow we are having roast pork with apple cider gravy.

Kiwi mum of 4 including Benjamin born still at 19 weeks on Jan 17th 2013.
