Ok, there got to be something I am doing wrong. I've tried it twice now and it's a soggy gross mess!

If you love it, please give me your recipe, step by step pretty please!

How are you doing it? I just kept peeling it in strips with a veggie peeler before I got a spiralizer... I don't usually bother cooking it. I have cooked it lightly, though.

Try just blanching it slightly.

use a julienne peeler and then blanch, meaning drop them into boiling water for a couple of minutes, take out, run thru cold water to stop the cooking, then top w/sauce. You want to do the zucchini after the sauce is ready and then top immediately.

I just use a peeler to make peels. I leave them raw.

To reduce sog, you can salt them and let them sit for a bit before cooking.

I have a special peeler that has "teeth" that does noodles. I toss them in a cast iron skillet with a bit if coconut oil to heat them then add sauce.
