vegetarian meal ideas

I'm getting sick of eating the same thing all the time. Suggestions anyone???

We're pretty simple.

Fried rice
Spaghetti
Rice and beans (red beans, black beans, pinto, whatever)
Bean Burritos
Breakfast Burritos
Lentil tacos
Retried beans toastadas
Buttermilk pancakes
Bean based soups
Black bean chili
Big veggie n salad night
Cheese pizza
Cheesy noodles
Buttered beans
Mexican style rice n corn

We only eat meat 2 times a week..

Ditto all that ^^ we also do (this is assuming you are vegetarian and not vegan) we use broth I make in most these to

Veggie pizza every week
Ramen w. Beans and veggies in it
Tomato and roasted bell pepper soup and grilled cheese
Bean and cheese quesadillas
Spinach w. Feta strawberries blueberries and tomato salads and roasted cashews in it
Oatmeal w. Peanut butter and chocolate chips
smoothies
Hummus on naan
Baked squashes drizzled w. Coconut oil is a fave here
Summer garden all sauteed in coconut oil lots of fruit
cold veggie pasta w. Poppy seed dressing, chunks of cheese and feta
Veggie lasagna
Bean ball veggie spaghetti
Baked potato bar
Potato soup


We are not vegetarians, however, we do fine not eating meat quite often. Though I wouldn't mind going vegan, we really love our dairy here.

DH and DS2 are vegetarian, the rest of us are not. Most of our meals are vegetarian, though. And when we do have meat, we have a meatless version as well (like when I make Stir Fry)

Some of our favorite meals are:

Chili and Cornbread
Veggie Quesadillas (we love it with onions, squash, and black olives)
Crepes (with scrambled egg/veggie mixture for dinner, then we put cooked apples in them for dessert)
Omelets or Breakfast Burritos
Mexican: Tacos, Burritos, Enchiladas, Bean dip, Taco Salad
Sandwiches (Subway-style, leave the meat off)
Veggie Burgers (I mix grated potato, carrot, and onion with an egg then cook like a patty. DH eats this as a burger when I'm craving hamburger!)
Pot Pie
Italian: Lasagne, Spaghetti, Alfredo, etc. can all be made meatless
Frittata
Chef Salad

I'm in the car so don't have the link but we really like sweet potato black bean burritos. We also add a goods cheddar cheese, not sure if that is part of the recipe or not. The recipe is easily found by Google.

I am loving homemade tamales, recently made poblano corn ones. They were delish and you can freeze an abundance of them.

I also came across a really good couple of soup recipes, 1 mushroom and a couple lentil or chili ones. I make them in triple batches and they freeze well in quart jars for easy lunch leftovers.

If you PM me your email addy I will send you a list of my favorite vegetarian dishes, all simple.

I have been using pepperplate for storing my recipes. I have quite a few good ones.

I recently made a philly cheese steak with portabello mushrooms instead of meat, it was amazing! Idk if its something you'd like, but I can type up the recipe if you want!!

Veggie pot pie, veggies and dumplings, soups galore, fajitas, avocado enchiladas, bean enchiladas, fried rices, "tuna" casserole, baked portabello and zuc topped with diced tomatoes and garlic, sweet and sour veggies over rice. I have more but I have to take dd to school.
