Yellow curry potatoes sounds really good! If I take the trouble to make something like curry, I make a big batch so we have some to freeze for nights I don't feel like cooking. The last time I did this we made a big pot of chicken sausage gumbo -- I opened the last freezer portion of it last night and I was kinda sad lol.
Chicken Curry

saute in 2 T hot veg oil, 2 T cumin for a minute then add, one chopped onion, 2 cloves chopped garlic, sprinkle of ground ginger about 10 minutes add one can diced tomatoes (use kind with chilis if you want more heat) saute until liquid is gone and you see oil around edges (8 mins?) add plain yogurt to taste I do about a cup cook 5 mins then add spices:

1 t ground coriander
1/2 t ground cumin
1/2 t turmeric
1/4 t cayenne
1/4 t black pepper
1/2 t garam masala

cook and stir for a minute then add about 6 boneless chicken thighs (I chop into smaller pieces but you could do whatever you like) cover meat with sauce bring to boil, put a lid on it and let cook on low for 30 mins stirring occasionally. If you chop the meat it cooks faster.

This has made me hungry going to go start dinner!

I finally got a lot done today-

3 loads laundry
cleaned out fridge
ran extra load of dishes
swept and mopped
fed and watered all the kids
