Ditto everyone else. Use as you would ground beef. I prefer to use it in recipes that have lots of other flavors if the gammy taste is strong.

Anything tomato based where you'd use ground beef, and if you have gamey meats look for recipes that have bacon in them, it helps mask it and help along the lower fat meats. Just so nobody is turned off by it though, it doesn't always taste gamey, or it shouldn't taste strong-gamey. Doe - (I hear, we can't shoot them in CA) tastes better and how the animal is killed and how skillfully and quickly it is prepared after makes a tremendous difference in the meat. So Op, if yours was taken by a skilled hunter it should taste good. My suggestion would be if you have a lot of it, start with a recipe that would completely mask the taste and work backward from there to see if you like it.

JERKY JERKY JERKY JERKY! Omg I love venison jerky! It's a great travel snack! Ever notice how almost all packable snacks are all carbs?! It's great protein! One of the highest sources of BCAA's. You can use just about any spices you want. I'll even do some with Asian spices. And some with honey and chipotle. And lemon pepper. And and and...! I love jerky

We have only $40 to spend for next weeks grocery trip since I way overspent for the superbowl party this week. :x So I'm gonna go with venison chili. I think it'll do the venison justice and I also have most ingredients on hand.

Okay, do tell...how do you make jerky?

Sounds like a good idea OP - plus, it'll make good leftovers if you end up with too much chili for dinner!

I have a dehydrator. So I just take a lb or so and mix is with whatever seasoning I feel like it and lay it in strips in the dehydrator. It is possible to do it in the oven. You can lay it on cookie sheets. 250F for 4 hours or so depending on how thick you make it.
To make it easier I will use wax paper to form the strips and then flip it onto the pan and take off the wax paper, KWIM? It can get messy!
