What's for dinner this week?

What are you feeding your family this week for dinner and what is your motivation?

Thrifty? Cheap? Gluten Free? Vegetarian? Healthy?




Most of our meals are vegetarian - occasionally some are vegan. I am going to enjoy my corned beef brisket and cabbage for St. Patrick's Day. Being 50% Irish I gotta...right?



Anyway...Here's our menu for this week:

Monday: Enchilada casserole with kale and sweet potatoes
Tuesday: Bean and rice burgers on whole wheat buns with sweet potato fries
Wednesday: Light Asian chicken and cabbage salad
Thursday: Homemade buttermilk pancakes and fresh fruit
Friday: Personal whole wheat english muffin pizzas
Saturday: Veggie Hash Brown Casserole
Sunday: Corned beef brisket and cabbage (slow cooker)

Breakfast - Egg cups, Hashbrowns, muffins, fruit

Tomorrow: leftovers

Wednesday: creamy chicken pasta

Thursday: beef stir fry

Friday: leftovers

Saturday: hamburger helper (homemade)

My motivation this week is to keep things easy.....had a new baby and this is my first week "on my own" with DH back at work. I'm putting together the lasagna tonight to bake later this week, most everything else is crock-pot-able or quick to throw together when DH gets home from work.

Tonight we're having mexican chicken & rice in the crockpot.
The rest of the week in random order...
Lasagna
Pulled pork in the crockpot
Oven fried chicken
Some kind of fish

Keeping it thrifty since we to pay property taxes soon!
Tonight: Tacos w/ all the fixin's and homemade refried beans
Tues: Eating out since we will out of town all day (Have a Chili's giftcard though!)
Weds: Hamburgers, strawberries, carrot & celery sticks w/ ranch dip and baked beans
Thurs: Dinner at church
Fri: Fish, brown rice, green beans.
Sat: Oven fried chicken, baked potatoes, salad and corn.

My Mood:
Easy, healthy, and fairly thrifty are out normal motivators. However we were staying at ILs house last week and even MIL admits she is not much in the kitchen:-(. We always come back craving "our kind of food."
Sat - korean short ribs, broccoli, egg noodles
Sunday - lasagna with homemade sauce
Tonite - leftovers
Tues - pork chops, salad
Wed - cheese plate (a family fave. Cheese, crackers, sausage, and fruit. Easy peasy).
Thur and fri will probably be leftovers, oatmeal, or something else I cam dream up and prepare while monitoring DD for pee (we're jumping into PL)!

WELL, my motivation is the fact that yesterday, the entire glass front of my 8 month old Kenmore oven just EXPLODED for no reason, and I now will not have use of an oven for a week... so its crock pot recipes or stuff that can be cooked on the stove top (although I admit, I'm kinda nervous about even using that)!!!

I had all these meals planned that required the oven - casseroles, chicken parmesan etc. I went and got the groceries and then had this happen, so I had to totally re-arrange. I went to Hannaford today and managed to snap up a few short-dated hunks of meat, so this is my meal plan until my beloved oven is replaced:

Tomorrow : Homemade Chicken and Stars Soup
Wednesday : Grilled Cheese and Tomato Soup
Thursday: Pot Roast and Vegetables in the crock pot (woohoo clearance angus roast!)
Friday : BBQ Pork Chops in the crock pot, green beans and brown rice
Saturday : Mac and Cheese in the crock pot
Sunday : Pioneer Woman's Chicken Tenders, mixed veggies and salad

I am sick this week and feel terrible. I can't even motivate myself to get out of bed to go shopping.

I am thinking leftover split pea soup tonight, I have some enchilada casserole I can defrost. Then I will have to go shopping, so pot roast in my slow cooker and then maybe some roasted chicken with veg.

We are going out of town this weekend, so I'm trying to use everything from the fridge.

Sunday: lasagna skillet, salad, garlic bread
Monday: chicken and dumplings, salad
Tuesday: green chile chicken enchiladas, rice, corn

Thursday: bbq hot dogs and fruit
Friday: leftovers
