Chicken casserole-type recipes with no processed ingredients???

I recently got a deal on some chicken breasts that were about to pass their "best before" date. I brought them home, poached them, chopped them up and stuck them in the freezer. Now I'm looking for some recipes to use my cooked chicken pieces in. Almost every recipe I come across calls for cans of cream soup, bottles of salad dressing or similar processed ingredients. I have no problem with using these ingredients but we live in Sweden where things like canned soups are either hard to come by or cost way more than I'm willing to pay. Does anyone have any good recipes for using up cooked chicken pieces that require only very basic ingredients?? Thanks!!

i redid my grandmas chicken cassarole recipe to make it less processed for health reasons...it sounds simple but ppl always love it. so here it is

Ingredients:
about 5 chick breasts
a couple carrots and celery stalks
1 package cream cheese
1 tub sour cream
1 stick butter
about 1-2 cups crushed ritz crackers( or bread crumbs or really you can get creative with this, ive even used french fried onions)

1. boil chicken about 20-30 minutes with chopped celery and carrots, salt and pepper.
2. chop chicken into small pieces.
3.while chopping chicken leave the leftover water (stock) in pot and boil down until it reduces some and looks like chicken stock.
4. mix 1.5 cups of chicken stock with softened block of cream cheese. fold in sour cream. add salt and pepper to taste.
5. stor in chicken to sourcream/cheese mixture.
6. crush your crackers or water your using as topping. melt butter and mix with crumbs.
7. put chicken mixture into 9 by 11 pan and top with crumb mixture.
8. bake at 350 for 30 minutes.

serve over rice. i always make broccoli as a side dish with this. it sounds simple but is awesome and great comfort food.

Not a casserole but chicken fettuccine is yummy

Melt 1tbsp butter in pan, add 2 tbsp flour stir well , add 1 cup heavy cream (although I've been using skim milk and had no problems).
Sauté your chicken and mushrooms if you want mushrooms, add to sauce.

Make fettuccine (as much as you need), add sauce to pasta when pasta is done.

I quite often make a chicken/mushroom/broccoli rice casserole

Saute chopped onions and mushrooms in a couple tbsp butter until onions are translucent
add a couple tbsp flour and stir until totally incorporated
Add two cups warmed milk one ladleful at a time and stir until thickened
Add two-three cups cooked rice, cooked chicken, and steamed or frozen broccoli

Stir all together (salt and pepper to taste) and pour into buttered dish
Bake for 30 minutes. My husband tops with mozzarella and then cooks another ten minutes until it's brown and bubbly but I am allergic to cheese so I do not

I've subbed zucchini for broccoli and subbed turkey for chicken and they all turn out well. I've contemplated adding parmesan to the mixture before adding the rice/chicken/broccoli but haven't actually done it yet, I assume it would turn out well.

http://www.mspimama.com/2008/04/chic...casserole.html since the chicken is already cooked add it on top of the rice the last bit of cooking so that it heats through. Just season it however you want.

You can also make chicken salad sandwiches with it

brush with italian dressing (or ranch or whatever) and grill in a grill pan to heat and sear a little.

Chicken quesadillas, nachos, burritos, tacos

Thanks for the ideas - keep them coming! I think I've got all of the ingredients for this recipe on hand (will have to substitute creme fraiche for the sour cream) so I think I'm going to give this one a try for dinner tomorrow night.

Made this tonight and it was a hit - well, except with my oldest but he's hard to please. He did eat everything on his plate though so mustn't have found it too bad. Thanks for the recipe!

We do a Mexican Chicken - it is chicken, a jar of salsa (we use homemade), rice and top with cheese. It is more of a skillet then a casserole but we love it!
