This works great for chicken breasts- Just thaw a couple of whole frozen breasts to make it. http://www.thehungrymouse.com/2009/0...d-bbq-chicken/

You can make chicken pot pie and/or dumpling filling. We use the same filling for both just thicken it up for the pot pie. You can freeze that to thaw and use or do it with shredded chicken. We normally use left over roasted chicken to make it the night we are going to eat it and freeze extra. Let me know if you want the recipe.

Fwiw, I've had really good success with tender chicken for shredding just by boiling plain chicken breasts in water (with salt and preferrably with some broth mixed in) and the lid on. I've only done this several times, so I'm not real sure as to what makes for the most tender breasts, but mine have always ended up tender and super easy to shred. Shred real fast with a fork and freeze for salads, etc. And although it makes for a VERY weak broth without any bones in it, you can use the left over water for cooking up rice, etc.

I'm picking up 80lbs tomorrow. Last time we got 160lbs. That was WAY too much work to prep at one time. I always divide it up into family sized meals and cut 1/3 into cubes, 1/3 into strips, and 1/3 trimmed breasts and freeze.

Do you can? I LOVE canned chicken. It is so nice to have chicken ready to go. I even put marinades in my jars and then I have chicken ready to go.

It's super easy, but you do need a pressure cooke.

Fwiw, I had no idea prior to this thread that real live people canned chicken, lol.

It's not pertinent to me w/o canning supplies, but since I've only canned once in my life, I would want to have a few years of successful veggie/fruit canning under my belt before trying with chicken, which seems more dangerous. But wow, that is neat!
