Crockpot meals?

DH is convinced he doesn't like anything that comes out of a crockpot. He isn't a fan of soups. I want to make a crock pot meal that is hearty, healthy and flavorful for him so he can see that good food can come out of a crock pot. I don't eat meat so something with no meat is ideal

Rachel ray did a show with four meals twenty dollars or less. I think they all had meat though... Not sure what kind of meals can be made that are meatless (sorry I am a meat eater lol)

I was going to say a roast, but obviously that meat. You can cook pretty much ANYTHING in the crockpot that you cook in the oven.

This isn't a whole meal by itself, but using the crockpot to make "refried" beans is seriously one of the best inventions ever! I make this all the time! I normally do a half batch in a small-ish crockpot, and normally skip the jalapeno.

We make crock pot lasagna frequently. Add broccoli to bulk it up. Lots of good recipes on recipezaar (I know it's called something else now but can't remember) and ... Can't remember the other site either! 365 crock pot or something like that. She wrote a book too.
