I can tell the difference when I'm sewing since I use them so much, but if the only time you're in contact with it is when you're changing a dipe you may not notice it. Yeah, I think it makes a big difference. I've switched to using 2 mil for making wet bags and pail liners, just because I think it's better quality. Not cheaper, that's for sure.

There is a noticeable difference in the softness of the lamination between the two. I prefer the feeling on 1mil, but 2mil is much easier for me to sew. It doesn't shift as much. I've made probably 60 diapers, half 1 mil & half 2 mil and they both have held up equally.

Going by feel, I think Fuzzi Bunz are 1 mil. I have no idea about HH.

I have heard that FB are 1 mil. I use both 1 mil and 2 mil and all of the dipes work the same. I think 1 mil wears out faster though. Again, this is only what I have heard.

Yeah, FBs are pretty sure 1 mil- I too like the softness better and have never had wicking issues... I've also seen tests done that make them equal- but this whole idea that it's hard to sew frightens me I'm going to the craft section ISO some 1 mil to try it out.
