Beef Recipes

Periodically, we buy a share of grassfed beef and end up with lots of cuts that we buy regularly otherwise. I like that it pushes us to try new recipes but I am totally uninspired this time around. Would love some recipes ideas if you have any to share. Something beyond beef stew and pot roast! For the steaks, I'd love an idea for a great marinade or rub.

Some of the cuts I still have - chuck roast, bone-in shoulder, boneless brisket, sirloin tip, rump roast, stew beef, porterhouse, t-bone, ribeye.

Crockpot shredded beef tacos
2 pounds beef (I used a boneless chuck roast)
2 tsp. chili powder
1 tsp. cumin
1/2 tsp. smoked paprika
1 cup beef stock
2 Tbsp. tomato paste
1 chipotle pepper in adobo sauce, minced (I love spice and used two!)
1/2 large sweet onion, diced
4 cloves garlic, minced
Flour tortillas
Mix the spices and rub on the roast and then sear all sides in a skillet with some oil just to get some color.
Put the beef in the crockpot and out the onion and garlic on top. Leave the pan on the heat, and add in the beef stock to deglaze, scraping up any browned bits from the bottom of the pan. Add the tomato paste and minced chipotle and whisk into the pan sauce. Bring the sauce to a boil, reduce the heat, and simmer for a few minutes until it thickens some. Pour the pan sauce down over the onions, garlic, and beef in the slow cooker. Cover and cook on low for 6-8 hours.
Shred the beef when you're done and put whatever toppings you like on them!
