Anyone have a really good fried rice recipe?

I just need a simple, no frills, tasty fried rice recipe. We are trying a gluten free trial for DS2 to see if it helps his digestive issues. I don't like watercress and he refuses to eat anything with egg in it! Other than that we are pretty open! Thanks!

As a warning soy sauce has gluten in it. There are gluten free varieties out there so you need to look for those.

Fried rice is super simple to make. I usually just take rice (as much as my rice cooker makes which is I believe 5cups) 1-2lbs boneless skinless chicken breast, 4eggs, and frozen veggies and go with it. I slice the chicken thin then fry in a large Wok with veggie oil until no longer pink. Then I add veggies (usually peas and carrot mix) and eggs (4 or 5) and fry until the egg is getting done. At that point I add the rice, 1/4 cup of soy sauce (or gluten free soy alternative), ground pepper and cinnamon. Mix well and fry a little longer to finish the rice and combine. Everyone here loves it and of course you can sub other meats, no meat at all, and other veggies. I am sure you can do it without the egg I'm just not sure how good it would be.

When we first heat our oil,we like to add garlic and green onion..probably my favorite part!

An old roommate of mine used to put leftover veggies (carrots, broccoli, peas, corn) and chicken (or cut up hot dogs) in her wok with some oil and heat it up. Then she would add a good amount of yellow curry powder (her's said Jamaican on the bottle) and some salt and coriander. Then she would mix in fresh or old plain rice. We called it Indian food, though we knew full well it was not. It was quite delicious.

if you use egg whites and mix it in with the rice to cook it its not visible. it will cook down and break up into "grains" then once you add the soy its invisible.

Add sesame seeds and a light sprinkling of sesame oil adds a ton of flavor and good health benefits too
