Have a look at her site has different sections for different diet requirements...paleo, no egg,gluten free, nut free etc. She has lots of good cookie/baking recipes on there.

You might try upping the liquids slightly and letting the cookie batter sit for a couple of hours (either in the fridge or on the counter ) for the flours to absorb the liquids better. Not sure if that would work, but worth a try...worst case is they are still crumbly and you wasted the sitting time).
