I also roast a whole chicken in the crockpot and then use the broth to make rissotto. We have roast chicken, rissotto, and a vegi. And then I use the carcass of the chicken, throw it back in the crockpot filled with water and whatever vegi scraps i hve in the freezer (I put peelings and celery ends and such) as well as onion and garlic and simmer for a few hours in there, and then use that as a basis for chicken soup, or use the broth for other soups or cooking rice or whatever. I often freeze it in quart jars for later use so I don't have to buy broth. We also like a brown and wild rice blend I buy at the health food store and I use chicken broth to cook it in and serve with swedish meatballs (recipe off of skinnytaste.com).

-Burrito bowls (seasoned meat and veggies on top of rice... love it with fresh cilantro)
-Creamy coconut-based curries

-Baked mac-n-cheese
-In the summer, we love cut up fruit and meat chunks as a picnic
-Glazed ham w/ baked potatoes and steamed broccoli

Just a couple of substitute ideas for you...
Corn free quinoa pasta is available from Edison Grainery. It's yummy and has a great texture. My DH hates most non-wheat pasta, but loves this one! It actually cooks up al dente and everything. I buy through Azure Standard, but Edison has it available on their own site, too, I think. If not, let me know and I'll try to help.

Chickpea miso (soy and gluten free. It's rice & chickpeas), adzuki bean miso (gf & soy free) and chickpea barley miso (not GF, but wheat & soy free) are available from south river miso. If you dilute it, you can substitute it for soy sauce in recipes. South river might also sell tamari from the chickpea miso sometimes, but I'm not really sure. You'll have some time to think about it, tho because south river usually closes for the summer. I dunno what the opening date is for this year, but it's usually September/October. I think some Whole Foods stores also carry it.

I think you got some great advice about everything else, but I know what a pain it can be to source stuff when you have multiple food allergies. I know that sometimes I just wish I could just be like everyone else and walk into the store, throw stuff into the cart and be done. Instead, it's like navigating a mine field and I spend a lot of time reading labels, putting stuff back and getting frustrated both at ingredients lists and prices. good luck!

Some of our favorites are:

- Meatballs (http://www.marksdailyapple.com/primal-meatballs/)
- Meatloaf (beef, onion, coconut flour, egg, lemon juice, and sometimes chopped spinach)... we make homemade BBQ sauce, but you could have with some other sauce since you're not doing tomatoes
- Pork with Pear Compote (quick, easy, and delicious) - http://www.recipe.com/pork-with-pear-compote/
- Pork Tenderloin (I buy the plain ones from TJ's) marinated in olive oil, lemon juice AC vinegar, salt, and lots of spices (rosemary, thyme, etc) and then grilled
- Roasted Chicken - http://www.nourishingdays.com/2009/0...en-vegetables/ (I make this at 25 degrees less on convection so the skin gets nice and crispy)
- Chicken in the crockpot - http://everydaypaleo.com/spice-rub-crock-pot-chicken/
- Salmon (rub crushed garlic, sprinkle salt, pour on some melted butter with lemon and bake at 400 for 10-15 minutes)
- Salmon cakes - 3 cans wild salmon, 2 eggs, onion or shallots or green onions, lots of dill, lemon pepper... form into patties and put in pan with heated coconut oil and cook for 3 minutes on one side before flipping and doing about 3 minutes on the other side. We serve these with a sauce made with homemade mayo, lemon, and dill... yum, yum!

If you look up Paleo or GAPS diet recipes, you'll find some good ones that don't have the foods you're avoiding (except possibly the tomatoes).

I also meant to mention marinated grilled chicken (same marinade as the pork) with rice pasta, olive oil, fresh basil, and parmesan cheese (we also do sun-dried tomatoes)

Ok, this book seems like it might be a good resource for asian cooking since most asian cooking is corn and tomato free. This would make it GF and if you use Coconut amionos it would be soy free. http://www.amazon.com/exec/obidos/AS.../chrisficti-20
