Vegetarian lunches?

I need help mamas! Two of my kids are going to a school that has asked us to send vegetarian lunches. My kids are meat lovers. They also don't do sandwiches (we the 3yo will but the 13yo will not).

So far I've got vege chili, Mac and cheese, spaghetti marinara. What else?

veggies and hummus, cheese sticks, fruit, etc
ratatouille (vegetarian variety of it)
bean burritos
boiled eggs (you didn't say vegan!)
quiche
large stuffed shells (cheese and spinach are my kids favs)
wraps with veggies and sauce all together

I do wraps with hummus and various veggies, usually I shred the veggies then roll up the wrap and cut it like sushi. English muffin pizza with tomato sauce, veggies and cheese
Greek yogurt with fruit and muffins
Cheese sticks, veggies, crackers
Can you do eggs? Fried rice with veggies and egg
What about mock meats like tofurkey? Will they eat Tofu?
Grilled cheese and tomato soup(I wrap the sandwich in foil and put the soup in a thermos)

waffles, pancakes, veggie pot pie, veggie fajitas, appetizer meal (fruit, veggies with dip, cheese), pasta salad, the one of mine that can have cheese often eats a slice of cheese as his meat, veggie noodle soups. One of dd's favorite lunches is sliced red peppers, olives, carrot sticks and crackers.

My kids love boursin cheese, hummus, white bean dip, crackers. Are thay able to heat their lunch or will you be using a thermos?

Thanks mamas - these are great! They can have cheese and egg - and we have thermos containers but they don't hear things up.

To the pp that asked - It's a Jewish school and to avoid issues around keeping kosher (since some students do but many of us don't) they ask to keep it vegetarian.

Last year they were okay with the little kids brining meat and my oldest ate vegetarian chili pretty much all year. This year they have let us know that the preschoolers need to go veg and my oldest has said she wants some new options. Problem is - she doesn't eat sandwiches and she doesn't like cheese (except sometimes Mac and cheese), and she isn't wild about eggs either though I think she will eat them if they are blended in with the fried rice maybe.

A frittatta with sautéed mushrooms seriously tastes like it has meat in it.

Baba Ganoush (like hummus, but made of puréed eggplant) is another good choice.

Smoked tofu with buffalo marinade/dip is awesome.

Core a cucumber and fill it with hummus, egg salad, or yogurt dip.

Vegetable Sushi (cucumber, avocado, tofu, bell pepper etc) soybeans
Pasta salad
Tortilla wraps
Cous Cous with veg.
Lentil salads
Tortilla Pizza

I need to work on this one myself, but glad DS is a sandwich eater.
