I have to make enough for 7 people so I always do the onion/kimchi and rice first, move it to a big bowl, do the veggies/meat/soy sauce add it to the bowl then do the eggs. If you want to make fried rice the same day you think of it then rinse your cooked rice with cold water before putting it in the fridge, it helps prevent some of the stickiness.

ETA: I do 2 cups of dry rice for 7 people so if you used all that you cooked you probably just had way too much rice in your pan at one time.

I always fry the veggies and eggs then add in the rice. I've never had an issue with my fried rice. I cook as per the instructions on my rice cooker and I do frequently use fresh rice. I add soy sauce (Tamari since I'm gluten sensitive) at the very end. I usually use brown rice. So far everyone loves the rice. I used to make it with chicken but I don't eat meat so just eggs now.

I've only ever used fresh rice and have NEVER had an issue, obviously it's more sticky than official fried rice, but the taste was good.

And yes, always stir fry the veggies first

And I don't think anyone mentioned a splash of seasme oil at the end of cooking.

I sautee onions in oil, add peas n carrots, add soy sauce, add rice, stir until war through. Remove from heat and stir in sesame oil. I fry the eggies separate and mix in after.

I use jasmine rice exclusively for everything. You need double the water to rice in your rice cooker. Day old rice is best, but I have used fresh cooked rice and it turned out fine. I do veggies first, sauté the egg on the side of the pan, then throw the rice in last. I learned to make fried rice from my maid in Thailand .

Always rinse your rice really good before cooking. Until it runs clear. Then use at least day old rice.

You can cook your veggies in the rice cooer with your rice, that is one way to ensure you don't burn off or get all f you oil used up.
Hot pan, really hot and constant motion. If the pan sits or there is too much rice in it you create a steaming effect getting everything soggy. The pan should be big enough that you can vigorously stir your rice and nothing is piled. Heat oil, scramble egg in the oil, add veggies, add rice (or veggie rice combo).
Another note if you are using evoo the smoking point is only about 300degrees, reg olive oil about 350... Neither gets hot enough to truly stir fry with. Vegetable oil or coconut is best, heat to smoking point.

i finally found this! lol. it seems like i did a lot of things wrong. rice wasn't old enough, improper water to rice ratio, too much rice in the wok at once... I'll have to try again on a smaller scale. thanks everyone!

When I make fried rice, here's how I do it:

2 cups brown rice and 4 cups water in the rice cooker

chop tons of veggies (I like carrots, celery, onion, garlic, bell pepper) and then add frozen peas and sometimes frozen corn.

Scramble 3 eggs with pepper in wok, remove to a bowl

Saute 2 diced chicken breasts in same wok with a small amount of oil. I season it with tamari soy sauce as it is cooking.

Once chicken is cooked, remove to bowl. Add veggies to wok and sauté until soft seasoning with tamari.

Once veggies are soft, add chicken, egg, frozen veggies and rice in and fry and stir for a few minutes, adding extra tamari to season rice!
