cheese making?

Has anyone tried this? Any advice or direction for a newbie?

My dad tried making cheese once when we were kids. It was awful and stunk up the house. He still doesn't know what went wrong.

I've made cheese. Mozzarella is pretty easy. There are recipes all over the internet. I also made cheddar curds. To make a block you need a cheese press. I just wanted fresh curds, so didn't bother with pressing. It's not terribly difficult, but does require watching because temperatures are important.

I've made mozzarella and mascarpone. A bit time-consuming, but delicious and really pretty easy. I haven't yet tried making an aged cheese; I don't have a good place for it to ripen.

As Yarnjess said, there are lots of recipes on the web. I like New England Cheesemaking Supply Co. - she has really detailed recipes with pictures. You'll need some basic equipment and ingredients as well - a good thermometer, for one, because temperature is very important; butter muslin if you're making a cheese that needs to be drained; various cultures and rennets and add-ins, depending on what you're making.

If you can find a cheesemaking class in your area, I highly recommend that. I found it really helpful to watch someone who knew what she was doing before I tried it myself.
