The same old thing...

Neither my husband or I were successful hunting this yr and we are down to just burger from the last cow we bought.
So now what do I cook for dinner? We did get a few nice salmon but I like to do that about once a week and I am almost out of chicken so that is 1-2 times a week. My folks are butchering a cow around x-mas and we are buying half so I just need some ideas to get me thru the next month for cooking with burger. My family is getting fed up with the usual, ie spaghetti, burgers, lasagna, hamburger soup, etc
Any ideas? I like trying new recipes, just haven't really found any lately. Thanks

This Quinoa Beef Picadillo is good, I often leave out the raisins and capers and it's still yummy.

My family really liked this Korean beef recipe that uses ground beef instead sliced.

Gyros with ground beef instead of lamb.

And I love calico beans, it's like baked beans but with hamburger.

One of our favorite things to do with ground beef is this Hamburger Stroganoff.

Well, in the pasta department, in addition to spaghetti you could do lasagna, manicotti or stuffed shells all with burger.

In the style of Mexican foods, you could do ground beef enchiladas, tacos (I assume you have already done that since that's pretty typical) or stuffed poblano pepers.

Also, pizza can use ground beef. And in the same vein as pizza you could do something like a calzone or home made hot pocket.

I have done pizza but totally didn't think of the calzone option. I think I will give that a go this week and use up some extra veggies in the fridge. Hopefully my basic pizza dough will work for the dough.

We did stuffed peppers with the last of our garden. That was a good one.

Thanks for the other options so far too.

Most basic pizza doughs will work for calzones. Make sure everything you put on it is room temp or warmer (ie like warming up sauce.) If you use veggies or ground beef that you have previously prepped and frozen, be sure to thaw it totally first, it can sometimes make it tough to get the dough cooked all the way through.

You can also do "porcupine balls" which are basically suffed peppers without the peppers. It's the ground beef and rice mixture that is made into meatballs instead of stuffed in the pepper. Use the same sauce of try out different ones.

As farmers we always have hundreds of pounds of ground beef in the freezer and get in the same burger funk. Lately we have been loving ground beef in our veggie stirfry and I also make a yummy curry with ground beef, sweet potatoes, chickpeas, kale and coconut milk. Different types of spiced meatballs also break up the same ole fare.

Meatloaf, shepherds pie, egg rolls, tacos/burritos/nachos, chili, beef and veggie soup, quiche with beef and veggies, taco salad, meatball subs

I love to make this. You can customize it as you will see

1lb browned hamburger in a well greased pie plate
i can of black beans
1/2 can of corn
a couple of dollops of salsa
1 cup of shredded cheese

mix up the biscuits recipe on a Bisquick box, or make from scratch

pour on top and bake at 350 for about 25min.

Now, you could make it more pizza ing, add pepperoni and mushrooms, instead of the beans and corn. Or a can of diced tomatoes and black olives, you get the picture, make it however your family would like it and use up what you have in the house. We never have leftovers.

Beef barley soup with ground beef is good, I make it often. We eat a lot of ground beef as well so will also be watching this thread for new ideas. Common dishes here are:

Spaghetti
Shepherd's pie
Meatloaf or meatballs (Pioneer Woman has an amazing meatball recipe on her website)
Cowboy lasagna (recipe online)
Tacos
Beef barley soup
Chilli
Beef and rice (made with canned tomatoes and ricearoni - I found that recipe on this forum a while ago, it's one of DH's favs)
Beef and tomato macaroni
Beef Wellington
Enchiladas
Cabbage rolls - I *would* make these but DH won't eat them
Salisbury steak

Pinterest has a lot of ground beef recipes as well
