Re: Chix Salad Recipes

There was a thread a few months back...here's my super yummy recipe.

4 cooked chicken breasts, shredded or cubed
4 stalks chopped celery
2-3 large dill picked, chopped (I use Clossen sp?)
about a cup and a half of halved red grapes
salt, pepper, dash garlic
mayonaise to taste...I use just enough to coat and mosit everything

Super yummy served on spinach salad w/ vinegar dressing

My absolute favorite:

Cashew Chicken Salad

2 c. diced chicken
1 c. crushed cashews
1 c. diced celery
1 c. mayonnaise
1/4 tsp. pepper
1/2 tsp. ranch dressing mix

Combine all ingredients in bowl. Serve on croissants with lettuce.

I love this stuff!

Re: Chix Salad Recipes

Here's my MIL's recipe that I love:

diced chicken or canned chicken breast
celery
finely chopped onion
red grapes, cut in half
pecans

Just throw it in a bowl, whatever amounts suit you. Then add Miracle Whip.

Re: Chix Salad Recipes

Mine is similar to Micki's...

Grilled chicken
red onion (or sweet onion, if red is too strong for your taste)
salted roasted cashews

mayonnaise
tabasco
toasted sesame oil (start with a little, like a teaspoon or two)

*I don't know How Much of What you'll need - I don't usually measure. It's most fun to wing it and record what you like/don't like about your recipe!*

Mix the mayo and sesame oil together until you get a creamy, fragrant sauce. Add a few dashes of Tabasco, just enough to warm it up a bit. Cut grilled chicken into bite-sized pieces, chop onion and leave cashews whole. Mix everything together, adding more mayo/sesame mix if necessary. Serve cold.

I use this on salads, on croissants or straight out of the bowl. It's a perfect lunch recipe to use that leftover grilled chicken from last nights dinner!

Re: Chix Salad Recipes

I use a friend's recipe to make Curry Chichen Salad

Chicken Breasts-grilled or broiled (Sometimes i pick from a roast chicken)\
Mayo
Curry Powder (enough to make the mayo nice and yellow)
a tablespoon or so of dried dill
some green onions
grapes-cut in half
sliced almonds or celery for crunch

MMMMMMMMmmmmmmmmmmmm!
