I made a roast chicken and all the fixins tonight - mashed taters, gravy, green beans, corn, stuffing, and homemade rolls. It seemed right on this snowy day and we'll eat off the leftovers for a few days.

I've got a pot of veggie beef soup simmering on the stove right now. I planning on making spaghetti, but we didn't get home from my appointment in time. If I can't simmer it at least four hours, I won't make it. Now I'm really wishing I'd started that spaghetti. It sounds better than soup tonight. *sigh*

We had vegan, gluten free mac and cheese last night. It is better than it sounds LOL. The boys love it. Tonight is potato leeke soup I think. I was going to make a crock pot meal but the prep was just too much while trying to keep up with the puppy so I think I will make the soup ahead and just reheat when we are ready if we decide to go skating. I can do the crock pot soup over the weekend.

Hip hip hooray! It's pancake day! I was lazy last night and just made musubi- two kinds. Poached salmon with wakame and shiso and spicy tuna. I served leftover wakame on the side and cooked ramen in the leftover poaching liquid. So today will be pancakes all day. American style for breakfast, Japanese okonomiyaki for lunch and Italian cannelloni florentine for dinner. We don't observe Lent or have mad mardi gras parties with king cakes but Oooh I love coming up with creative ways to serve pancakes all day. It's a fun challenge.

Last night I made Balsamic Chicken Noodle Bowl, then I just had the leftovers for lunch. I love this recipe so much!! It's pretty much everything I want in a meal- quick, healthy, cheap, yummy! The only thing I do differently from what's written is I use a little less noodles, and I saute the garlic with the red pepper, instead of using the garlic raw.

I wound up making green noodles last night http://chocolatecoveredkatie.com/201...green-noodles/ It was really good though I didn't use the fresh cilantro (I cheated and just used a little dried, I'm not a huge cilantro fan) so it turned out more yellow from the turmeric. I think we will do it again, dh and I really liked it. Tharen refused it eat it but Kearnan seemed to like it fairly well.

So tonight is going to be potato leek soup. I have it mostly prepared already, when dh gets home I will heat it again to finish it.
