What to do with 2 lbs of green beans?
The title says it all. Any ideas welcome, especially those that are appealing to a toddler.

Green Bean Casserole! The recipe on the back of the Durkee French Fried Onion can is good, as is the Campbell's Cream of Mushroom soup recipe.

Baked fresh green bean 'bundles,' wrapped with bacon and sprinkled with parmesan cheese! MMMMMM!
Boil beans just a bit, then wrap small bundles of beans with a bacon slice, bake bundles in a shallow baking sheet until bacon is crispy, then sprinkle with parmesan cheese and salt and pepper. I LOVE this recipe! Or send me some! R

We have jars of "dilly beans" which are kind of like lightly pickled green beans (whole). . . yummmmmmmy in the summer!

Use turkey bacon! Or maybe wrap the bundles in some low fat turkey deli meat instead? - just a ltitle smething to make it more appealing to a kiddo. I bet that would be okay.
Of course, nothing takes the place of bacon flavor - except maybe lard Good luck! R

Green Beans with Lime
Ingredients 1 lb. fresh green beans, cut into 2-inch pieces (4 cups) 1 Tbsp. cooking oil or olive oil 1 lime Directions 1. In a large skillet cook green beans in hot oil over medium heat for 18 to 20 minutes until crisp-tender and lightlybrowned, using a spatula to gently lift beans occasionally to prevent them from sticking. Meanwhile, shred 1 teaspoon of lime peel. Cut lime in half. Add lime peel to beans. Cook and stir for 1 minute more. 2. Lightly season beans with salt, drizzle with lime juice, and serve immediately. Makes 4 (1/2-cup) servings. I made these and they were YUMMY!! |

I do almost the same thing, but with lemon instead- oh yummy! I LOVE IT! ...and to think I used to hate green beans.

I just steam them or cook them in the microwave. They are also good cooked with onions. My girls love green beans. My family that have home gardens freeze extra green beans after cleaning them. Just make sure you use freezer quality bags

Sounds funny, but i LOVE these...green bean pickles...you cant tell they are green beans when you eat them...
