Homemade Mac N Cheese

Does anyone have a good recipe for homemade Mac n Cheese. I have been craving it lately and would like to make some. Nothing with Velveeta though...blech!

2 cups uncooked macaronni
1 cup sharp cheddar
1 cup breadcrubs
3 Tbs melted butter

Preheat oven to 350 butter casseole dish large enough to hold cooked macaronni. Cook pasta for 7-10 minutes, drain and set aside. In mixing bowl combine pasta, white sauce (see recipie below) 3/4 cups cheese and use salt and pepper to taste (I usually have people add it as needed after its cooked) Pour into baking dish, sprinkle remaining cheese and breadcrumbs. Drizzle melted butter over top and bake 30 minutes

White sauce

4 TBS butter
4 TBS flour
2 cups HOT milk
1 Tsp salt
1/4 tsp white pepper (I use regular black pepper)

Melt butter in sauce pan remove from heat, mix with flour, return to heat and cook until it bubbles, then add 2/3 of hot milk at once and rest gradually. Increase heat and boil stirring constantly until mixture thikens. Season with the salt and pepper.

Don't know if you are a Food Network fan but you could look up Giada's Italian Mac and Cheese. It is heaven.

I have a really good dairy free version.........but that wouldn't be cheese..it'd be mac and fake cheese. lol....
