Here, a couple of times a month we try serving a light pasta dinner with no meat/chicken/ham/turkey, etc.

2 lbs. of Favorite pasta shape
Toss in quarter of a cup of: chopped onion/chives and sprinkle garlic salt pepper to taste.
Chop and toss in a half a cup of any combo: fresh or frozen veggies, (ie. peas, mixed, snap peas!)
Optional: Add fresh or dried herbs if prefer.
Optional: Add 2-3 chopped (small) sun dried tomatoes, or 1/2 a can of whole canned, drained tomatoes with basil.

Sprinkle lightly with jar of parmesan and or romano powdered cheese (or a bit of fresh if preferred), and a drizzle of olive oil/vinegar or ital. dressing (1/4 cup).

Toss/mix. Can be served warm or room temp. Runs about under $5 and makes 2lbs.! Makes for dinner, and next day lunch sometimes. These measurements are suggestions but are per preference.
We look for sales on tomatoes, pasta, and stock on them.
I buy or grow culinary herbs, etc. (parsley, basil, cilantro, mint, rosemary, sage, ginger) during summer, preserve them by freezing them in a bit of water within ice cube tray partitions, or air drying them over a rack over the stove over several days, and use them up as needed.

I am loving this thread!

A family favorite is a spruced up ramen noodle soup.
I boil the veggies and then add the noodles (broken in half the long way) and then add the seasoning packet. I add extra water than the instructions ask for as it will boil down some. Veggies can be anything, like a thinly sliced green, yellow or red pepper, a cut up stalk of scallion, 1 shredded/grated carrot, and place a fried egg on top to serve.
