Hopefully, the baby doesn't mind a little spicy milk!

Later this week, I'm going to make a double batch of spinach and ricotta lasagne and freeze half of that. And then I'll be doing the same thing with cheese and olive enchiladas next week. Hopefully, by making extra stuff now, I'll have enough dinners in the freezer to get us through the hectic first couple of weeks that the baby's here.
Kinda old, but if you read this I'd love to get the recipe for veggie chili!

Re: Whats for dinner?

I'm trying out this recipe tonight..although I don't have any sausage so it'll be vegetarian tonight. I'm using a different cornbread recipe too.

Delta Supper with Cornbread Topping

1 lb. smoked sausage, cut into 1-in. pieces
1 lrg. onion, cut into thin wedges
2 lrg. green bell peppers, cut into strips
3 Tbsp. canola oil, divided
1 (15 oz.) can diced tomatoes, undrained
2 (16 oz.) cans black-eyed peas, drained
1 C. self-rising cornmeal mix
1/4 tea. cayenne pepper
2/3 C. milk
1 egg, beaten

Preheat oven to 400 degrees F.

In a lrg. skillet over med.-high heat, cook sausage, onion and green pepper in 1 Tbsp. oil until vegetables are tender.

Stir in tomatoes and peas; reduce heat and simmer for 5 min. Pour into a prepared 13 x 9-in. baking dish.

In a sm. bowl, combine cornmeal mix, red pepper, milk, egg and remaining oil; stir until smooth. Pour over sausage mixture. Bake for 25 to 30 min. or until golden brown.

Makes approximately 6 to 8 servings.
