Last night we had chorizo con huevos and rice. Tonight is clean out the fridge night (leftovers) so last nights dinner or bbq pulled pork sandwiches. I think I have some broccoli I could steam as well. some carrot sticks sound good to me

Here is the recipe... This time I bought a pork loin roast that was on sale and it was good. I trim the layer of fat off that is on the top.

Easy Pulled pork sandwich

INGREDIENTS:
1 boneless pork shoulder roast, about 2 1/2 to 3 pounds
1 cup chopped onion
1 small chipotle pepper, chopped ( I use canned chipotle in adobo and sometimes add another pepper. We like it spicy.)
1 bottle (12 ounces) barbecue sauce, your favorite
3 to 4 tablespoons honey, or to taste
dash hot pepper
sandwich rolls
coleslaw, optional
PREPARATION:
Place pork roast in a lightly greased 3 1/2 to 5-quart slow cooker. Combine onion, chopped chipotle pepper, barbecue sauce, honey, and hot pepper; pour over roast. Cover and cook on LOW setting for 7 to 9 hours. Serve on buns, topped with slaw, if desired. Delicious with beans and coleslaw!

It's so stinkin' hot here right now and we have no airconditioning. We're having rice pudding with fresh peaches. We can't stomach anything heavier than that right now!
