Look what I found in my garden :)

it weighs EIGHT POUNDS....BTW..those are 4x4 tiles on my kitchen floor

What do I do with it??

holy cow! I bet it was one of those surprise hiding ones - I love that! Hmmm, zucchini sliced up thin, breaded, topped with marinara and mozzarella cheese... sounds like a yummy zucchini parm!

MMMM, i love those! That is HUGE!!
you can cut into slices and bread it up, like dip in egg and dunk in bread crumbs or beer batter and depp fry them and eat them up, theyre really good!

I have a good recipe for zucchini bread if you want it! Also, some friends of our slice it up, coat it with olive oil and seasonings and grill it. Yum!

That is one honking squash LOL> B/C it is so big it will probably be tough inside. I would suggest grating it for zucchini bread. You can shred it and make some now and then freeze the shredded to have fresh zucchini bread throughout the winter.

Isn't it amazing when you miss one and they keep growing? Our first year planting zucchini we thought they would be done when they stopped growing. We had some BIG zucchini that year!

When I get one that big (on accident now LOL) then I just put it in the food processor to chop it up really small and freeze it. It's nice to have for when I am in the mood for zucchini bread in the middle of winter. They really aren't that great for frying since they are a bit tough when they get that big.

I love zucchini! Personally, I would add it to everything. Pasta, bread, soup/stew, you can even pickle it like you would cucumbers. YUMMMMM!!
