I find only thing they are good at that size is bread. Anything else and the skin's too tough to eat.

I also have a good recipe if you want it (bread)

Re: Look what I found in my garden :)

I love everything that's already been mentioned! I would personally choose to do a few loaves of bread - bake one and freeze the batter of one in a pan for a later date - use some for a few dinners that week and then save the rest by either freezing or dehydrating. I dehydrate here and then use it in soups all winter

Re: Look what I found in my garden :)

I grated some and added it to the spaghetti sauce I made today and canned from all the tomatoes that came from my garden! I have some ready to try and make bread with tomorrow, and I froze some of it (grated). WHEW That was/is ALOT of zucchini!

Make some jam (check for recipes online, especially those not needing pectin).

Wow!! That's huge!! We got nothing from our pumpkin/zucchini patch. lol But our backyard gets very little sunshine, so we weren't shocked.

I get a few jumbo's like these from my parent's garden. I shread it up and freeze it in little zip-lock bags. Then during winter, I can have a taste of summer - zucchini bread!
