I like the book Frozen Assets: cook for a day, eat for a month. It has a lot of easy freezer recipes. There's also a lite book too.

I don't make anything "special." I just put our nightly meals in the freezer (leftovers).

I make breakfast burritos to freeze:

flour tortilla (the mid-size work best)
scrambled eggs (about 1-1/2 per burrito)
handfull of shredded cheddar cheese
pre-fried bacon or sausage (the ready cooked stuff is faster and less messy)
if i'm ambitious, fried potatoes

roll burrito, wrap in a paper towel, then wrap in aluminum foil or plastic wrap. the paper towel is what you heat it in the micro in. heat on high for 1-3 minutes. DH loves these and he's the envy of his co-workers.

I do chili, anything pasta, brocolli (is that spelling right - doesn't look right hmmm... ) cheese soup

Definetly the frozen assets book is great. I get mine from the library every once in a while.

Cheese stuffed pasta shells are easy and a huge hit here with my kids.
