Last year I made up a bunch of zucchini breads and froze them, they made great Christmas gifts for the neighbors and kids teachers! Just take them out of the freezer, tie a ribbon on them and .... instant gift!!

We have the same problem here. My FIL makes zucchinni (sp?) cobbler. Basically just follow your favorite apple pie recipie and sub the zuch. in for the apples pieces. Just dice 'em small. I'm about to try it hopefully today.

Sorry it took me so long, but here's the recipe:

Poor Mans Crabcakes

Yield: 3 cups or about 20 patties
Ingredients
Grated Zuchini 2 cups
Egg 1 Large
Italian Bread Crumbs 3/4 Cup
Old Bay Seasoning 1/2 tsp.
Salt 1/2 tsp.
Pepper 1/2 tsp.
Melted Butter 1 Tbsp.

Mix all ingredients well. Form patties and fry in vegetable oil until browned.

-I'll have to get the recipe off of my mom. It's really realy good. I do the zucchini cobbler also but mine is in a sheet pan and I love the chocolate cake with it in there. I so need to go to the farmers market.

I don't know about other LDS people... but this phenomenom is somethign I've lived with my whole life... it's always been the "joke" (although it was very true for a few productive gardening years when we lived in California) that church was the only place you locked your car or else you'd get MORE zucchini (or tomatoes.. or pumpkins...) in your car by the time church was over!

PS... in the town I grew up in (San Lorenzo, CA) we have the Zucchini Festival... talk about zuc's out to wazzoo!! And every year if the newspaper crew interviewed you and you could spell zucchini out loud you got a free t-shirt... you'd be amazed with how many people can't spell it!

we had this dish last night and it was soooooo yummy! Even my 12 year old who I fight with about EVERYTHING except pizza and chicken nuggets ate it up AND THEN took some leftovers with her for lunch at camp today
Creamy Zucchini
1 tablespoon vegetable oil
1/2 red onion (I used a whole one) sliced
salt and pepper to taste
1 lb zucchini, sliced
1 tablespoon crushed garlic
1 14.5 oz can diced tomatoes
1 15.25 oz can whole kernal corn
1/2 cup heavy cream
Heat oil in a large saucepan over medium heat. Stir in red onion, salt and pepper, and cook about 5 min, until onion is tender. Stir in zucchinin, and cook 3 5o 5 min. Mix in garlic and tomatoes. Continue cooking, stirring occassionally, until the mixutre comes to a boil.
Stir corn and cream into the mixture. Reduce heat to low, and continue cooking, stirring occassionally until thick and bubbly, 15 to 20 minutes.
We served it over noodles........YUMMY! It had sooo much flavor
