SPICY BLACK BEANS AND RICE
2 cups dry black beans 1 c chopped onion 1 c chopped celeery 1 c chopped carrot 1 medium yellow or green pepper, chopped 2 fresh jalapeno peppers chopped 4 cloves garlic minced 1 1/2 tsp ground cumin 1 1/2 tsp ground corriander 1 tsp dried thyme 1 tsp salt 1/2 tsp black pepper 2 bay leaves 2 cans chicken broth (3 1/2 cups) 2 tbls soften butter 2 tbls flour 4 cups hot cooked rice I put the beans overnight in the crockpot covered in cold water, drain in the morning. Or you could boil then for ten min. and then let set for one hour. Combine all the ingrediants except butter, flour and rice in crock pot. Cover and cook on low for 10-11 hours or high for 5-6 hours. If using low heat turn onto high and mix together butter and flour and whisk into bean mixture. Cover and cook 30 more min. discard bay leaves. serve with hot rice. I leave out the carrots because dh hates them and if you take the seeds and ribs out of the hot peppers it decreases the heat. ou could also just drop the amount of hot pepper if it's too spicy but my kids don't have a prob with it. OM gosh, we have WIC beans taking up so much room in our pantry! Anyone have a good ham and bean soup/stew recipe??? My mom used to make this way back in the day w/corn bread. It was awesome. I think it's like what the bean mix is. But WIC won't let you buy those. ??

OHHHHHHHH! We LOVE ham and bean soup! We always make it after the holidays with our left over ham bone
![]() We put the ham bone with chunks of ham left on, into our crock pot and put several kinds of canned beans in and walk away for the day and it's awesome just like that! What a simple meal, so yummy and good for you ![]() I am taking notes on some of these recipe's as our grocery bill is getting higher and higher as gas prices go up and it's getting the point where I am feeling guilty for eating anymore ![]() I am off to start a new vegetarian thread! I need ideas!

Time saver. Sort beans and wash them. Toss in a pan and boil for 5 min and then let sit for 1 hr. Rinse add new water and seasonings ( I use a ham seasoning, salt,pepper, onions, garlic, and canned tomatoes). Bring to a boil and then cut back to a simmer. Usually done in 2 hrs. I do black beans like that all the time and serve it with rice and cheese. Leftovers make good quessidias(sp), Taco Soup, bean burritos, served over chips with picante sauce.

Beans and cornbread
Northern beans, rinsed well. I like to soak them over night to be sure they will be soft. Beans in a crock pot with onion, garlic, bay leaf, carrots and double the water to cover all. Let them cook ALL DAY. Salt and pepper to taste If we have left over ham in the freezer or from dinner we will slice it and put it in there also Served over a made box of the Jiffy corn bread, |

I just want to revive this thread. Any of you that said you have recipes you could post, post away. I am in serious need of recipes. As I am sure these other momma do too. I know there is a Frugal tread on here too so maybe some of those mamma's will share as well.

1 cup dried will usually equal 2 cups cooked. A can is about 2 cups. HTH!
