This is how I make mine, although sometimes I will try a different way just for a change.

This is how I make mine.

4 cups of dry elbow mac
3 cups milk divided
2 egg yolks
2 tbs butter
2 tbs flour
3 cups sharp cheddar
1 1/2 cups monterey jack
1 tsp dry mustard (I think, I never measure it I just add it in until its good)
salt n peppa to taste

Cook macaroni til al dente.
Cook butter and flour for a few minutes til its looks foamy. Slwly whish in 2 1/2 cups milk. Bring to a boil. At this point I just turn off my burner-I have electric. Mix yolks with remaining milk. Slowly temper the yolks and then add to the white sauce and return to a slow boil. Remove from heat and add spices. Then add 2 cups of chaddar and 1 cups of the jack cheeses. Add to mac and pour into a 13*9 dish. Top with the remaining cheese and if you want some bread crumbs.

I like to broil mine for about 5 mins. I like the top to be crunchy, but the inside to still be creamy.

I agree with you karebear23. I love this topic, really fits my appetite. I think that they should use mozzarella for the cheese.
