Re: Holiday Baking Recipes..Post your recipes!!

We make lots of cookes, but this year I am adding this:

Easy Chocolate Shortbread

*Preheat oven to 325

1 C. all-purose flour
1/4 c. sugar
1/4 c. cocoa powder
1/2 c. cold butter, cut into chunks

-In a medium bowl, combine "dry" ingredients together. Add butter, using a pastry blender, cut butter until mixture resembles fine crumbs. Work mixture with your hands until it clings together (dough will be very dry to start). Shape into a smooth ball.
-On an ungreased cookie sheet, pat or roll dough into an 8-inch square (if rolling, lightly flour rolling pin). Score by lightly pressing a knife into dough to make 32 rectangles, each 2x1inch; do not separate. Bake for 20-25 minutes or until shortbread is firm in center. While warm, cut inot rectagles along scored lines. Cool on a wire rack.

Thanks for that easy pb cookie recipe! I need wheat free goodies this year! Anyone else have good wheat (gluten) free recipes??? Oh, and what kind of pb do you use? Will natural pb work? The kind you have to stir, that is...

3 cups all purpous flour
2 1/2 cups white sugar
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons cinnamon
2 teaspoons vanilla
1-2 cups of either walnuts or pecans
3-beaten eggs
1 1/2 cups oil
3-lg bananas (or four small ones)
One 15oz can of heavy syrup crushed pineapples

Mix all dry ingredents (I sift them)

ETA: Drain the pinapples. Don't use the juice.

Add eggs, vanilla, nuts, pineapple, bananas and oil.

Mix well
then poor into bread pans. Makes two lg pans or three-four small.
bake at 350 for about 1 hour. The pineapple will make the loafs darken. You can not tell if they are done by looking at them. You have to use a tooth pick to check. If you are using smaller loaf pans then cook time will be less.

I promise this will be the best banana but bread you have ever eatin, well given that you fallow the exact recipe

Nikki.. gotta question about your banana but bread~
ok, seriously, is it the moist, moist kind, or is it a bit drier??
I am looking for a yummy moist kind. I got a recipe from a friend and it turned out a bit to wet. kwim?
