Smile Charlotte's Chocolate Layered Mint Fudge

I wanted to share my recipe!It's easy,very yummy and looks beautiful in gift tins or to take places this time of year! Be prepared to give this recipe out.

Chocolate Layered Mint Fudge:
2 cups (12 onces)semi sweet chocolate chips(I only use Nestle Toll House ones in this recipe)
1 can(14onces)sweetned condensed milk,divided(Eagle's brand is best)
2tsps. vanilla extract

1cup vanilla or white chocolate chips(Toll House again-it does make a difference)
3 tsps.peppermint extract
2 drops green food coloring

Line a 9"square pan w/ foil(leave some overhanging pan)and butter or use Reynold's nonstick foil.
In a heavy saucepan melt the semisweet chocolate chips and 1 cup of the sweetned condensed milk over low-med. heat until smooth.Remove from heat and stir in vanilla extract.Spread 1/2 of this fudge in the pan.Refrigerate for 10 min. or until firm.Set fudge aside in pan.

Melt the white chips along w/ rest of sweetned condensed milk until smooth.Stir in peppermint extract and food coloring.Spread this mint fudge over fudge in fridge,again refrigerate 10 min. or until firm.

Heat remaining chocolate fudge up until smooth again.Smooth this over fudge in fridge.Refrigerate overnight.Lift fudge out of pan and peel foil off back carefully.This should be easy.Cut into bite sz. cubes and enjoy!

OK, saving this for a Christmas when I'm not trying to lose weight. 51 lbs lost this year, still many to go, so fudge will wait until next year or the year after! But it look great!

I started a TOPS (take off pounds sensibly) group last year in the small town I live it, so whether I like it or not I have to keep working on it to be an examples for the other members. This time of year we consider ourselves successful if we just maintain our weight or have small gains. You can really blow it during the holiday season, but if you find a balance somewhere you can keep close to the right track. I still have about 60 pounds to lose or so, but I'm heading in the right direction!

It's that time of year again!So I decided to bring back my old post--plus I need to make this recipe again and bumping it up is faster than looking through my recipe box--wich is a mess.

Oh, I'll do this for a party we're attending in a couple of weeks. I think I'll leave out the green food coloring, although I'm sure it looks pretty.

Susan~it will work fine without the green food color in it(for the mint layer),it will still be minty and pretty but w/ a white layer in the middle instead of the green one.
These are soo good--I promise not intimidating at all.I always have raves on these as well as recipe requests when I take them anywhere.
My fav thing to do is pkg the fudge up in gift tins(I buy my gift tins at the Dollar store)--it looks so pretty that way.
