I love carrots and potatos in stews, particularly beef stew or with a pork roast, yum! Also potatos and carrots with a little onion and garlic makes a good foil pack.

My quish (how do you spell it) recipe that calls for heavy cream. You could make one and put half and half in it instead. There are also some ice cream recipes you could use half and half in.

DH makes alfredo sauce w/ half and half insted of whipping cream to cut calories and fat and it's amazing!

That's the other thing I was thinking of. Alfredo sauce. Using fresh parmesan makes it really good.

you can put half and half in anything that calls for milk, it will just be richer....you can also add water to it to make it less rich......

do you have a baby, I would puree the carrots and freeze for baby food....

in the newest "joy of cooking" there is a carrot soup recipe - I think it's carrot and curry? add some half anad half to thinken it - wouldbe great!
