Re: I Need Lunch Kit Help...Please

Thanks for the Thermos tips! I am glad to know I can pack pasta and such. I didn't know what I would do with that! They love pasta, but cold pasta ain't too great.

I have tried gazpacho. I'll have to look up how to make that. My dd loves soup!

The super easy way I make it:
1 big can of v8 or tomato juice
1 cucumber
2-3 roma tomatos
1 green pepper
1/2 red onion

chop it all up small( I have to take all the seeds out) mix with tomato juice add about 1tbs olive oil, 2 tbs white vinegar. Then I top with croutons, but that would get soggy lol.

Well, I can tell already she would looooooooove it!

She loves all those things. Now the 5 year old, I am not sure about. I'll give her taste test though. The older one loves V8 and vegtables.

I couldn't believe my oldest likes it so much. She 'hates' green peppers lol, but this is all she would eat Sunday.

you will have to go back in her archives cuz I don't think school has started again for her son yet.
I love the look of the laptop lunchboxes...My kids are 3 & 1, so we aren't to the point of needing a full-on lunchbox yet, but we do send both kids' lunches to daycare. One tip I got from my mom: either make the sandwich on frozen bread, or freeze the sandwich (make the night before) - by lunchtime, it is perfectly defrosted and you don't get soggy bread from everything soaking into it. Here's what my 3 y.o. usually gets:
-peanut butter and jam sandwich (or pb & honey w/ banana, etc)
-fruit (usually banana, cuz those are his fave, but grapes, berries, peaches, pears are a great hit)
-plain yogurt w/ applesauce & wheat germ "sprinkles"
-green juice 50% watered down
Other options: whole wheat crackers w/ cheese (keep separate, sometimes the cheese makes the crackers soft)
-tortilla instead of bread, rolled up - makes fun presentation
-tortilla w/ shredded chicken, avocado (or guacamole), cheese, lettuce, onion, whatever other veggies float your dc's boat
-tortilla or bread w/ cottage cheese/cream cheese & fruit (or jam, etc)
-cold pasta salad (there are lots of Japanese recipes that are intended to be cold)

hth!

Re: I Need Lunch Kit Help...Please

Yummy! All that sounds great! I am really getting inspired now.

I went to the store and got some ingredients for lunch kits! Even got some thermos's for hot stuff.

I got the stuff for the soup and forgot the olive oil and white vinegar! Maybe I got it in the house though.

Got some tortillas and veggis and yogurts too. Now I am actually looking forward to making a lunch!

Keep the tips coming! It is so helpful.

Re: I Need Lunch Kit Help...Please

I only bought lunch on Hoagie Day once/month in school, so lemme think of what Mom made me...
-carrot chips (sliced on the diagonal w/ a wavy chopper from Pampered Chef--but now I see them in the produce aisle already cut) w/ ranch dressing
--lunch meat/cheese roll-ups (no bread)
--my 'special' lunch: cocktail weenies boiled in water and stored in a Thermos...was still hot at lunch time and I loved those baby weenies!
--cheese cut w/ cookie cutters in stars/moons
--Juicy Juice box: Mom always froze it to keep the other things cold and added a metal spoon so if it wasn't 100% defrosted, I could rip the top off and eat it like a slushie...yum!

Ok...that's all I can remember. And she always wrote a note on my napkin, or drew a funny face. I loved that!

Re: I Need Lunch Kit Help...Please

we use a freezer pack too, and I let Cody decide what he wants (from what we buy of course we don't let him do the shopping LOL) so today it was
PB n J
cracker sandwiches
rasins
a juice

he does not have a huge lunch appetite so we're good LOL

yesterday was
pb j again lol he likes it
apple
raisins
pudding

sometimes he'll have cheese, crackers, fruits & veggies and his drink other times a sandwich and a few small things... just depends on his mood lol and once in a while like friday is ravioli n garlic bread he'll buy lunch, this is the second year he's brought lunch (well last time was half a year at one school lol gotta love the Army :P )
