My menu plan for the week

We have an very low budget for this week so not the healthiest of meals but thought it might be interesting to share. Excuse the frosted cake i have been craving a piece of frosted cake for over two weeks. Lots of leftovers cause i am cooking for 3 and the recipes usually make a lot more than we can eat.

monday: Meat w/ hamburger helper. Mixed veggies
tuesday: left overs
wednesday: ramen
Thursday: cheese enchaladas rice corn
Friday: left overs
Saturday: spagehtii carrots bread
Sunday: left overs

Deserts:
cin. applesauce
blueberries thawed in fridge
frosted cake
cereal

alternate meals(have on hand):
fettuchini
tuna casserole
cornbread and chili
pasta w/ tomatoes and mozzarella on top
scrambled eggs w/ veggies and cheese wrapped in tortillas

Sunday Super Bowl Party - buffalo wings, dino chicken, carrots & celery w/ blue cheese dressing, potato chips & onion dip
Monday spinach & bacon egg casserole, salad with blue cheese
Tuesday crockpot Chicken cacciatore, whole wheat flax spaghetti
Wednesday - Veggie Egg Foo Young, brown rice
Thursday - Turkey & Black bean chili, (dairy free) corn casserole
Friday - crockpot chicken & vegetable curry, barley
Saturday lunch - vegetable soup using up the veggies / Dinner - Leftovers or grilled cheese

Treats & Snacks:
granola bars
flax seed granola
muffins - kids' choice
possibly try to make crackers

Oh how fun! I usually just look at the fsot, but I found this while DD was sleeping!

Here is ours starting from today
Monday-Italian Chicken foil packets
Tuesday-Dirty Risotta
Wednesday-grilled steak burrito, rice, beans
Thursday-Lasagna
Friday-Rootbeer pulled pork on homemade buns, fries
Sat-Fried Chicken, mac and cheese, hominey
Sun-Philly cheese steak on fresh buns

Desserts-Some of this will get sent with DH to the squadron and I will take some up to the gate guards, thats why I always do "mini" lol. We could never eat it all and I love to bake to much...lol
Oatmeal cookies
Bailey's and oreo truffles (I made these this weekend )
Marble mini cheese cakes
Blondie Brownies with Butter maple sauce
Bread Pudding with whiskey cream.
Mini Tiramisu Brownies
Peach Crisp with vanilla bean ice cream

Oreo Truffle Balls SOOOOO easy! I found this on a food blog I go to and I love to have them on hand

8 ounces cream cheese, softened
16 ounces oreos, broken into quarters
Enough best quality white chocolate chopped to measure about 2 cups (I just use white chocolate chips since I keep them on hand)
Sprinkles(optional, I used red and green when I sent these out for xmas)

In a large mixing bowl, beat cream cheese for a couple minutes to smooth out. Add in just over 1/2 of the broken oreos and mix until thoroughly combined. Add in the rest of the oreos and mix just until combined - some bigger pieces are ok.

Cover bowl and chill for at least 2-3 hours. Scoop out dough with a heaping teaspoon and roll into 50-60 balls. Cover and place back in the refrigerator to firm up.

Slowly melt the white chocolate in a double boiler, stirring occasionally, until most of the chunks are smooth. Remove and stir to melt the rest of the chocolate. Dip each truffle ball and set aside on a silpat or parchment paper. If the chocolate mixture starts to firm up, place back over the double boiler to slowly remelt, or gently rewarm in the microwave. Store in the refrigerator after all are dipped.

Irish Cream Trufflesmakes about 20 truffles

1/4 lb. bittersweet chocolate, chopped
1/4 lb. semisweet chocolate, chopped
2 Tbsp. unsalted butter
1/2 cup heavy cream
2 Tbsp. Bailey's
crushed chocolate coated espresso or coffee beans, for rolling(if I was in the states I would use the espresso beans in a mix of white and dark chocolate, alas I am in Germany so I just use whatever yummy beans we have on hand)


Put the chopped chocolate in a stainless steel bowl and set aside.

In a small saucepan, heat the butter and heavy cream to just boiling and then turn off. Pour the mixture through a sieve onto the chopped chocolate. Gently whisk together the chocolate and cream mixture until the chocolate is melted. Stir in the Bailey's. Refrigerate the mixture for an hour or longer, until firm.

Using a small cookie scoop, make equal sized truffles. Roll them in your hands, to make them round. Roll into the crushed chocolate covered coffee beans.


I just had to go eat one....Dh said "Those poor gate guards aren't going to get any are they?" lol

Tonight: Pancakes, hashbrowns and eggs
Tuesday: Spaghetti, garlic bread, salad
Wednesday: Bourbon chicken, broasted potatoes, asparagus
Thursday: Beef and vegie soup, homemade focaccia bread
Friday: Sloppy joe cups, finger vegies and chips
Sat: left over
Sunday: probably something in the crockpot

I have spent more money this past week on groceries than I should have with the Superbowl party that we had so I tried to make a menu with what we had in the freezer and pantry. I will have to get only 5 things at the store this time!! I am so proud of myself. We don't do desserts around here. We do have candy like M&M's that we consider dessert. Snacks are usually crackers or fruit.

It will be interesting to go to the store and buy only whats on my list. I usually find more things that I think we "need".
