What to do with cooked chicken?

I have cut up cooked chicken and need some ideas on a new dinner to make with it. Any ideas, especially crock pot meals I can use up cooked chicken pieces in.

I have a really good recipe for chicken enchiladas!
Let me go get it.....
Ok here it is:

1/2 cup chopped onion, I like to cook mine b4 adding it to the chicken mix
1/2 of an 8 oz pkg cream cheese, I like to add a bit more than that
1 TBSP water
1tsp ground cumin
1/4tsp pepper
1/8 tsp salt
4 cups chopped cooked chicken
12 tortillas, 7-8"

Mix together and spoon 1/4 cup in middle, maybe a little less than that. Roll up and put in a 9x13 greased pan seam side down. Will roll easier if the tortilla is warmed a bit.
The sauce:
1 can cream of chicken soup
1 8oz sour cream
1 cup milk
2-4 tbs jalapeno pepper, I use small can chopped green chilies
1/2 cup shredded cheddar cheese
Combine everything except for the cheese. Pour over enchiladas. Cover and bake for 30 mins at 350 degrees.
Sprinkle cheese over top and bake uncovered for 10 more mins. till cheese is melted.

I have found after making these for a few years now that it makes enough for a 9x13 pan and a 8x8 disposable pan that I put in the freezer. Just thaw the pan and heat as normal. I freeze uncooked.

I do use more cream cheese and cheddar cheese in mine. I have tweaked the recipe to our tastes.

You could make chicken a la King or add it to pasta and alfredo sauce, stirfry, chicken stew would be good in the crock pot, chicken pot pie. Umm can't think of anything else at the moment

This is one of my faves.

Chicken and broccoli ziti

1/4 cup diced onion
1 tsp minced garlic
1/4 tsp oregano
few pinches of red pepper flakes
About 2 cups of cooked diced chicken
8 oz ziti
about 2 cups of broccoli florets broken into forked size pieces
(fresh or frozen-if frozen slightly defrost them first)
1 can chicken broth (which is almost 2 cups)
2 cups water
1/2 cup cream (you could prolly use milk)
1/2 cup of parmesan(I use the cheapo kind)


Cook onion in some olive oil for about 5 mins, add garlic and cook a bit more.
Add oregano and red pepper flakes. Add the liquids, bring to a boil and then add ziti. Cook for 12 mins over med to med hi heat. Add broccoli and chicken(if it needs more liquid add up to a 1/2 cup). Cook about 5 minutes more. Pasta and broccoli should be done. Add cream and cheese. Yummy!

I also make a chicken n biscuit bake too, its a lil more time consuming.

Here is another idea that we just had for lunch.

Cook cut up chicken
can diced tomatoes
2 cups cooked noodles, either penne, or rotini
1 container, 8 oz pesto
Mix everything together and enjoy!
Sprinkle fresh Parmesan over top.

We add the chicken to rice - love it in the fried rice from Trader Joes or we'll add it in mexican flavored rice w/ a little cheese on top.
