homemade spaghetii sauce.. *****and need advice!!!

Any tips.. this is what I putin it so far 2 tbsp butter, 1 1/4 c water, puree, tomatos diced a couple, oregano, garlic, parsley.. im simmering for a few hours on the stove.. sound good. Ultimately Im using this in my lasagna dish.. could I add in eggplant or would the be wierd?

i always put basil in mine...I like basil...lol eggplant would be really good. I have seen recipes where they use that instead of noodles.
Oh, don't forget salt, mine always needs quite a bit bc I use fresh tomatoes.

add mushroom, carrots, red wine, squash... lots you could add, but sounds good as is!

I like to add fennel seed. Yum! Plus, I'm ashamed to say....SUGAR!
But what you've got sounds great too! There are so many ways to make sauce.

My dh has been making this sauce lately, and it's SO good.
Pastene crushed tomotoes with no salt added NOT chunky style
1 head - that's right, the WHOLE head of garlic
Sautee the garlic in olive oil and add a finely chopped onion.
let simmer until all soft and the house smells like heaven.
add tomatoes and let simmer for a few hours
I can't even tell you how awesome this is... simple deliciousness.

i can only imagine how awesome it would taste with a huge glass of red wine.
only 19 more weeks! :-)

I do mine similarly, but also add a lot of fresh whole basil leaves + salt + pepper.

Spaghetti sauce is so hard to screw up, you can pretty much throw in whatever you want but I always do green peppers. Also, if it's too acidic-tasting, I've heard you can put a tsp of instant coffee in it.

Usually I start with a tomato puree base. Here it has like 0 sugar in it, so I add a squirt of ketchup (yes, ketchup!) to get me started. Then I add in about a TBS of Herbs de Provence, oregano, basil etc.. I put in about a tsp or two of olive oil as well.

I put in about a TBS or two of sugar and maybe a tsp of salt... and play with it until I get it 'just right'. If I have a really good week where I haven't had bad results with garlic, I'll add in just a pinch of dry garlic to get us going.

I let it go to a boil and stir a few times, so it 'chunks up' and becomes more like Ragu without the added chunky veggies and/or meat.


I'll use this for spaghetti & for pizza... If I use it with pizza, I'll sautee sliced mushrooms and toss them into the sauce so it's easier for me to spread on the dough.
