use for leftover mashed potatos

This is one of my fav's the boys love it too

Ham n cheese mashed potatos

2 cups mashed potatos
3/4 tsp garlic salt
1 cup diced cooked ham
1 cup shredded chedder cheese
1/2 cup whipping cream

in bowl combine potatos and garlic salt
spread in greased 1 1/2 qt baking dish
spinkle on Ham
fold cheese into whipped cream
pour over ham
bake uncovered for 15 min or until golden brown

I make Latkas

Cut up some onions and throw them in with the potatoes. Then, make pattys and fry them in some veg. oil. Yum! and sooooo great with bacon and some applesauce for breakfast!

Mashed potatoes can be used as a thickener for soups. You can also use them in brunswick stew. And I find they freeze pretty well in single serving portions (they wind up tasting kinda like instant when you thaw them out, but I don't mind instant potatoes).
