Anyone have a recipe for a healthy birthday cake for a 1st bday?

My nephew turns 1 at the end of the month and my sister and I would like to find a healthy recipe for his birthday cake. Anyone have any great ones that they'd like to share? Thank ya much!

I only know of the un-healthy kind. We make dirt cake with crushed oreo's and a layer of pudding mixed with cool whip.

Mine too!

What about a zucchini cake? Just use a recipe for zucchini bread (one that has low sugar).

I guess it depends what you consider "Healthy" ...

I have a vegan chocolate cake recipe I'm planning to use for my DS next week for his 1st. No sat fat or cholesterol, but there's still the sugar & white flour. I may have to do some experimenting - try replacing some of oil with applesauce and add in some whole wheat flour. Maybe reduce the sugar a touch. Hmm, something to try!

For cake mixes you can add stuff to them to make them healthy. I know w/ spice cake in place of the eggs and oil or water (whatever it says) use a small can of pumpkin. Very yummy, can't taste the pumpkin, and it is very very moist.
Also angel food cake mix w/ pinapple (include the juice) in place of the other stuff.

If you look up weight watcher recipes they have tips to make cakes and stuff healthier

(This recipe is from The New Farm Vegetarian Cookbook) and submitted by MHVS secretary Carol Vito where it was well received at a recent board meeting. Our nutritional advisor
suggests using whole wheat pastry flour or 1 cup unbleached and one cup whole wheat. Walnut oil can be used instead of canola. Also organic sugar is a good choice (it is not filtered through bone char as some commercial sugar is)
When I made this for my DS2's 1st, I only used half the sugar, and I used coconut oil instead of canola. I also used whole wheat flour that I milled myself. And I didn't have nutmeg, and I didn't use raisins. I also added 1/2 tsp. of baking powder. So basically, I used this recipe, but I didn't

oh, and I made "frosting" by putting some cheesecloth over a cup, spooning some yogurt into it, and putting it in the fridge overnight. The next day, the yogurt is much thicker and frosting-like, and I added cinnamon & a little sugar to that. I think cream cheese frosting is also pretty healthy compared to regular frosting.
