I NEED a new Salmon Recipe PLEASE!!!

I need a new recipe that is relatively easy but is different than our usual lemon pepper and broil one because I am SOOOOOO Sick of that one I could scream! I made one several years ago when my husband and I were dating that had some kind of cream topping and dill on it, it was good but I can figure out what it was again but I'll try anything right now just something different! Oh and it's Wild caught Sockeye I'll be using if that makes a difference. Thanks!!

I make this grilled salmon recipe fairly often. Its simple and yummy. (Incidentally, I always keep shallots in my pantry but I'd think you could easily substitute a little minced onion, if that's all you have handy.)

Line a baking sheet with foil and place the salmon on the sheet. Spread some butter over the top of the salmon, sprinkle some basil over it, and then pour lemon juice over the top. Pour enough lemon juice over so that the fish is sitting in a good pool of it. Most of it will evap. in the oven, so I pour extra so it doesn't dry up enough to burn the tiny bit left on the foil. Slice up some lemon and place on top of the salmon, too.

Mmmm, sockeye is my fav

I like it baked with pesto spread over the top.

The original recipe is to take a sheet of puff pastry (you can get some without hydrogenated oil at the HFS) lay a pile of baby spinach in the bottom, then top with salmon filets spread with pesto. wrap the pastry around the whole thing and pinch it closed, then brush the top with eggwhite and bake until golden brown. Serve in slices across - really pretty.

However, I consider puff pastry a rare treat around here so I only do it that way once or twice a year. Other times though I just bake with the pesto and serve greens on the side. Delish!

If you have real maple syrup, you can comibine about 1/2 cup of syrup with 1/2 cup of reduced sodium soy sauce. Add some minced garlic (about a teaspoon). Marinate the fish in it for half an hour, remove, salt, pepper, grill. It's great!

You can also google "Maple crusted Salmon" and find variations on this theme!

This is the BEST salmon I've ever had HANDS DOWN! I make it all the time:

Pecan Crusted Salmon

4 4-6oz salmon fillets
1/4 tsp salt (though I usually just eyeball it)
1/4 tsp pepper
2 Tablespoons dijon mustard
2 Tablespoons butter, melted
1 1/2 Tbs. honey
1/4 cup soft breadcrumbs (I just buy regular breadcrumbs, I don't worry that they're not "soft")
1/4 cup finely chopped pecans (I have substituted for other nuts, and I've also left them out all together and just doubled the breadcrumbs)
2 teaspoons chopped parsley (again, I omit this sometimes)
lemon for garnish

Preheat oven to 450 degrees

Sprinkle slamon with salt and pepper.
Place fillets, skin side down, in a lightly greased baking dish (cookie sheet will work).

In a small bowl, combine mustard, butter, and honey. Brush on fillets.

Combine breadcrumbs, pecans, and parsley. Spoon mixture evenly on top of fillets.

Bake for 10 minutes or until fish flakes easily.

You really should try it. It's so simple and DELICIOUS!

I love mine done with some minced/crushed garlic, crushed rosemary, salt and pepper. Mix all together, baste it on both sides and broil/grill. yummy!
