If you don't use any refined white sugar...

..what do you use? What do you use in your baking?

I'm starting to look into alternatives to refined sugar, as my son seems to have problems with sugar in his diet. I'm looking for information on substitutes and experiences with using them. I'm looking at honey, maple syrup, maple sugar, molasses, and stevia. Experiences?

But for my bread baking I use organic honey. You can usually get some at your local farmer's market for cheap. Our market has 32oz for $12...what a steal!!!

Xylitol!!!!!
PRO: natural sweetener made from corn and berch trees. diabetic freindly ... calorie freindly .... great way to reduce likely decay caused by regular sugar!!! no sugary aftertaste!
CON: needs to be introduced slowly for some to reduce bowel upset if you know what i mean! LOL doesn't bother everyone.
tons of info on the net!!
i personally like and use the one by XLEAR called XYLOSWEET which i order o the net...i also chew spry gum from the company or trident which uses xylitol as it's sweetener to inhibit decay.. betcha didn't know that!

P.S. in cooking it's fine but i did have a blueberry pie come out way too sweet and a bit watery... others recipe's were ok
pie was a bit better cooled
