Our yummy breastfast dinner recipe from tonight

I tried something new and it was a hit. Served with toast - and easily under $5 too! This recipe makes enough for 8 filling pie slices

Hashbrown Potato Pie

- 5 large eggs or 1-1/4 cups egg substitute
- 1/2 cup milk
- 3 cups hashbrowns (the little cube ones) thawed
- 1/3 cup onions thinly sliced
- 1/2 teaspoon salt
- 1-1/2 cups cheddar cheese shredded
- 4 slices bacon, cooked crisp and crumbled or 1/3 cup real bacon bits

Heat oven to 350. Beat together eggs and milk in a medium bowl; stir in potatoes, onions and salt. Stir in 1 cup of the cheese and half of bacon. Pour into greased 9-inch pie plate or quiche dish (I used my round glass pyrex cooking dish). Bake 30-35 minutes or until center is set. Sprinkle remaining bacon and cup cheese over top of pie; continue baking 3 to 4 minutes or until cheese is melted.

Yum!
