I would do it. It's not like we're talking a nursing newborn or anything. I think he'll do fine. Kids usually do, and the parents usually worry for no reason.
And, if it gets too bad - they can call you and you can pick him up. If nothing else, at least the the grandparents keep the kiddies for the day so you and DH can have some fun! Thats very important too!

Yes Yes Yes 10 thousand times Yes. You and dh need time alone. It is soooooo important. And since you can't just leave them whenever and she is being open minded about the sleeping thing, go for it!!!!! I bet he will do just fine. I just left ds at my parents for an overnight last weekend. He took a sippy and fell asleep and slept with my mom. He made it til 6 am and got into bed with my 12 year old son and slept til 8. My parents LOVED it....they needed some good bonding time with him!

And dh and I had a lovely evening!!!!
